Cheesy Pea And Bacon Fritters

Ingredients

  • 1 large potato, cooked and mashed
  • 50 g plain flour
  • 1 egg
  • 100 ml double cream
  • 1 small onion, peeled and finely chopped
  • 100 g bacon, diced into small pieces
  • 100 g frozen peas
    Birds Eye Field Fresh Garden Peas 400g Frozen
  • 60 g grated mature cheddar
  • 30 g butter, plus a little extra for frying
  • Sea salt and black pepper

Preparation

  1. After mashing the potato, leave it to cool. When it is cool, add plain flour, egg and double cream. Mix well.
  2. Put to one side while you melt the butter and fry the onion and bacon until light brown. Cool, and add to the potato mixture. Season to taste.
  3. Add the cheese and peas. Melt a little butter in a non-stick frying pan. When the butter is frothing, add dessertspoons of the mixture to the pan and fry on each side until golden Delicious with sausages or bacon!
  4. Makes approximately 6-8 fritters.
