- Preheat oven to 190deg, gas mark 5
- Cook the Bake to Perfection Cod (as per pack instructions)
- Mix the vegetables with the olive oil, put on a baking tray and roast in the oven for 30 minutes or grill on a medium to high heat for 10 minutes
- Place the couscous in a bowl and pour over the boiling water.
- Cover for 5 - 10 minutes, then fluff with a fork.
- Mix the grilled veg in with the cous cous and serve with the Cod and Mediterranean sauce over the top.
