We have created the perfect simple pea and mint soup. With  just 5 minutes of preparation and a few simple steps, you can enjoy a heart-warming soup. Ideal for a cold day but to be enjoyed throughout the year.

Ingredients

Butter
A Dash of 
Cream
1 Fresh Sprig of 
Mint
1 Small 
Onion (peeled and chopped)
500 
ml
 
Vegetable Stock

Preparation

  1. Dice the onion and sautee in the melted butter to soften. Be careful that the onions don't turn brown.
  2. Once the onion has softened, add the frozen garden peas with 500ml of vegetable stock. Simmer for 3 minutes before seasoning to taste.
  3. Pour the soup into a liquidiser and blend until you have a smooth mixture.
  4. Add a dash of cream and a sprig of mint before blending again.
  5. Serve and enjoy.

Serving tip

If you are feeling in the mood to be a little more indulgent then add some extra cream with a sprinkle of mint. The perfect accompaniment is a warmed crusty bread roll.
