Ingredients

Butter
1 sprig 
Fresh Mint
2 small 
shallots

Preparation

  1. Dice shallots finely. Melt the butter in a pan and add shallots to soften.
  2. Add peas and sautee until hot.
  3. Finely shred mint leaves and add to the pan just to mix.
  4. Take off the heat, season to taste and serve.

Serving tip

The minted peas can be enjoyed on top of crisp warm bread or bruschetta.
