Preparation
Finely chop the basil and place in a large bowl, along with the cooked peas, pine nuts, olive oil, grated parmesan and a pinch of salt, to taste. Blend to form a pesto.
Cook the gnocchi as per the pack instructions.
Once the gnocchi is cooked, stir in the pesto, garnish with some additional cooked peas, fresh basil leaves and parmesan.
