Pea soya bean and potato salad

Ingredients

  • 500 g baby new potatoes
  • 200 g Birds Eye Peas
    Birds Eye Field Fresh Garden Peas 400g Frozen
  • 200 g Birds Eye Soya Beans
  • 2 sweet pickled gherkins (sliced)
  • 1 medium red onion (finely chopped)
  • 4 salami slices (shredded)
  • 4 tablespoons olive oil
  • 2 tablespoons gherkin juice
  • 1 tablespoon English mustard
  • salt
  • freshly ground black pepper

Preparation

  1. Cook the potatoes, drain and slice.
  2. Cook the peas and soya beans accordingto the packet instructions.
  3. Mix the potatoes, peas, beans, gherkins and salami together.
  4. Make a dressing with the remaining ingredients, season and leave for 1 hour to marinate.
  5. Place in a bowl and serve.
Serving tip

To bring out the flavour of the new potatoes, add a teaspoon of caraway seeds while cooking.
