Pea and Potato Mash

It can sometimes be hard to get your child to eat vegetables. A good way to get them starting to eat their greens is to put some Birds Eye Peas into their mash potato. Try this delicious pea mash recipe. as a great side dish to serve with Birds Eye Fish Fingers.

Ingredients

250

floury potatoes (peeled and cut in half)
50

softened butter
4 
rashers streaky bacon (cut into thin strips)

shallots (finely diced)

Birds Eye Peas

tablespoon
 
double cream
freshly ground black pepper
nutmeg
salt

Preparation

  1. Cook the potatoes in boiling water for about 20 minutes or until cooked. Drain well and mash
  2. While the potatoes are cooking, melt 2 teaspoons of the butter and cook the streaky bacon. Add the shallots and cook until they are soft but not coloured
  3. Cook the peas according to the packet instructions and then purée them in a blender
  4. Combine the mashed potatoes, remaining butter, double cream, pea purée, bacon and shallots. Season to taste with salt, pepper and nutmeg

Serving tip

Try with sausages or beef stew.
